The idea which stands behind Water&Wine is part of the comprehensive philosophy which the Nałęczów Zdrój Group cherishes. It consists in respecting nature and all the good features which come from the local soils, environmental thinking, sustainable development, and love for unique interior designs.

Water&Wine prepares most of its dishes from its own products, since vegetables, fruit (including grapes for producing wine), honey, and fish are, respectively, farmed, collected, and bred by the restaurant itself. The crops are cultivated following the rhythm of nature, with the use of only natural plant protection products and agrotechnical methods which help preserve the biodynamic balance. This is complemented by a regenerative farming model, i.e. maintaining a closed loop cycle of organic matter, from garden to table to garden. In this way, the restaurant concept gives back to nature what it takes from it.
